Founded in a Harlem basement in 2012, Doc Herson's Natural Spirits is the 1st Absinthe Distillery in New York City.  With their impeccable taste and retro sensibilities, husband and wife team Kevin Herson and Stacey Luckow epitomize the creative era of pre ban Absinthe’s lusty atmosphere. Transporting those whom imbibe on a journey back to the days of bohemian artistry and ambience.

Kevin’s love for culture led him to travel the world and experience food and drinks of all customs and varieties.  His passion for experiencing worldly culinary delights authenticates his unique palate for distilling spirits, introducing unexemplified palliative delights to the world of craft spirits.

As an avid lover of history and style dating the Victorian era through the 1930’s, Stacey’s knowledge of ambience encapsulate the Absinthe with the aesthetics of apothecary.  Layering the senses while transcending the spirit to that of medicinal enculturation amongst the brand enthusiasts and patrons.  Her eye for beauty in the experience unmatched by her brand brilliance.

Green Absinthe Tasting Notes:  A complicated yet delicate balance of botanicals. Subtle wormwood on the nose with hints of anise and fresh mint. Sharp on the palate with sweet licorice countering the bitter wormwood. A bright citrus-full mouth feel, slightly dry yet complex.  Refreshing and soothing herbal finish.

Made with organic grains from upstate New York and 11 different botanicals, our Green Absinthe made entirely in house from fermentation to bottle, can be enjoyed simply over ice or in any of the various traditional cocktails prepared with Absinthe.  Or one can simply enjoy it as a cocktail with ice, seltzer and a squeeze of lemon.

Red Absinthe Tasting Notes:  A complicated yet delicate balance of botanicals.  Subtle anise on the nose with hints of wormwood, hibiscus and citrus lemon.  Soft on the palate with sweet hibiscus countering the bitter wormwood.  A bright citrus-full mouth feel, slightly dry yet complex.  Refreshing and soothing floral finish.

White Absinthe Tasting Notes:  A complicated yet delicate balance of botanicals. Subtle poppy and spice on the nose with hints of anise. Soft on the palate with a full-flavored mouth feel.  Soothing and aromatic finish.
